Abstract
Korjenasto povrće zadnjih desetak godina dobiva sve veću popularnost i sve je češća namirnica koja se redovito koristi u prehrani djece i odraslih diljem svijeta. Razlog tomu je pojačana svijest korisnika o antioksidacijskoj aktivnosti, kao i o brojnim drugim blagotvornim učincima na kompletni organizam. Antioksidacijska aktivnost korjenastog povrća, predmet je mnogih radova i studija. Cilj ovog rada bio je ispitati te usporediti antioksidacijsku aktivnost odabranog korjenastog povrća (celer, cikla, mrkva i peršin). Sama antioksidacijska aktivnost pripisuje se visokim udjelom fitotvari poput flavona, flavonola i fitosterola, vitaminima A i C te raznolikim mineralno – kemijskim sastavom. Korištena je elektronska spinska rezonancija (ESR), spektroskopska tehnika koja omogućuje precizno mjerenje koncentracije slobodnih radikala u uzorku. Praćen je pad intenziteta ESR signala radikala 2,2-difenil-1-pikrilhidrazil (DPPH) po dodatku male količine ekstrakta soka korjenastog povrća otopini radikala tijekom 30 minuta. Uzorak ekstrakta nefiltriranog soka cikle pokazao je najjaču antioksidacijski aktivnost, dok je najslabiji učinak imao ekstrakt filtriranog soka peršina. Slijedeći rezultate mjerenja moglo bi se zaključiti da sviježe pripremljeni sok od cikle može poslužiti u neutralizaciji i eliminaciji slobodnih radikala te na taj način umanjiti vjerojatnost oksidativnog stresa, ali i preventivno može poslužiti u sprječavanju nastanka raznih akutnih oboljenja.

Root vegetables in the past decade is gaining more popularity and it is the most common ingredient used regulary in diet of children and adults all over the world. The reason for that is the antioxidant activity and many other beneficial matter on the whole body. Antioxidant activity of roote vegetables is the main case study. The purpose of this study was to investigate and compare the antioxidant activity of the selected root vegetables (celery, beetroot, carrots and parsley). The Antioxidant activity is considered to be the couse of high value of phyto-substance like flavones, flavonols and phytosterols, vitamins A and C and the mineral – chemical composition. Electron spin resonance (ESR), the spectroscopic technique that allows precise measurement of free radical concentration in the sample, was used. The loss of ESR signal of 2,2-diphenyl-1-picrylhydrazyl (DPPH) was measured in function of time passed after adding a small amount of juice to radical solution, during 30 minutes. A sample extract of unfiltered beetroot juice showed the strongest antioxidant activity, while the weakest performance showed filtered juice extract of parsley. Following the results of the measurements it can be concluded that freshly prepared beetroot juice can be used to neutralize free radicals and reduce oxidative stress, and preventive can be used to prevent the occurrence of various acute diseases.
