Abstract
Bakterija Staphylococcus aureus je patogen karakterističan po svome staništu i antimikrobnoj rezistenciji koji uzrokuje kliničke infekcije na globalnoj razini. Kliničke infekcije poput bakterijemije i endokarditisa klasičan su primjer prodiranja ove bakterije u čovjekov organizam. Bakterijska sposobnost stvaranja enterotoksina u hrani, dodatan je faktor koji doprinosi patogenosti S. aureus. Prema Pravilniku o zdravstvenoj ispravnosti namirnica, hrana kontaminirana ovom bakterijom u koncentraciji većoj od dozvoljene, smatra se zdravstveno neispravnom te može biti uzrok alimentarne intoksikacije. Infekcije uzrokovane bakterijom S. aureus kod imunokompromitiranih skupina ljudi mogu dovesti i do smrtnog ishoda. U ovom istraživanju ispitana je sposobnost razmnožavanja bakterije S. aureus u proteinskim dodacima prehrani pri temperaturi hladnjaka, sobnoj temperaturi i temperaturi ljudskog organizma unutar 15 dana. Tri vrste proteinskih dodataka prehrani na bazi sirutke korištene u radu su: koncentrat, izolat i hidrolizat. Za praćenje kinetike rasta, proteinski pripravci s dodatkom bakterije S. aureus nasađivani su na selektivnu Baird-Parkerovu podlogu na kojoj rastu karakteristične crno-sive kolonije sa halo zonom.
Abstract (english)
Bacteria Staphylococcus aureus is a pathogen characterized by its habitat and antimicrobial resistance that causes clinical infections globally. Clinical infections such as bacteremia and endocarditis are classic examples of bacterial penetration into the human body. An additional factor that contributes to the pathogenicity of S. aureus is the bacterial ability to produce enterotoxins in food. According to the Ordinance on the health safety of food, food contaminated with this bacterium higher than allowable is considered unhealthy and may cause food intoxication. Infections caused by S. aureus in immunocompromised groups of people might be fatal. This study examined the ability of S. aureus to multiply in protein supplements at refrigerator temperature, room temperature, and human body temperature within 15 days. The three types of whey-based protein supplements used in the paper are: concentrate, isolate, and hydrolysate. To monitor bacterial growth kinetics, protein preparations supplemented with S. aureus were cultivated on a selective Baird-Parker agar on which grow characteristic black-gray colonies with a halo zone.
