Abstract
Jabuke su jedna od najkonzumiranijih vrsta voća. Vrlo su popularne u svijetu pa tako i u Hrvatskoj. Poznat je pozitivan utjecaj jabuka na ljudsko zdravlje u vidu smanjenja oksidativnog stresa, razine kolesterola i triglicerida te razvitka dijabetesa. Jabuke mogu doprinijeti smanjenju bakterija u usnoj šupljini. U radu je uspoređeno antioksidacijsko djelovanje jabučnog soka dobivenog iz četiri sorte: Jonagold, Idared, Zlatni delišes i Granny Smith. Također, analizirano je i uspoređeno antioksidacijsko djelovanje kore jabuke. Korištena je elektronska spinska rezonancija (ESR), spektroskopska tehnika koja omogućuje precizno mjerenje koncentracije slobodnih radikala u uzorku. Praćen je pad intenziteta ESR signala radikala 2,2-difenil-1-pikrilhidrazil (DPPH) po dodatku male količine jabučnog soka otopini radikala, tijekom 30 minuta. Antioksidacijski učinak pripisan je ukupnim polifenolima, flavonoidima, vitaminu C, klorogeničnoj kiselini te načinu ekstrakcije jabučnog soka. Najjaču antioksidacijsku aktivnost je pokazala sorta Granny Smith, pripravljena s korom dok je najslabiji učinak imala sorta Jonagold čiji je sok ekstrahiran samo iz pulpe.

Apples are one of the most consumed fruits. They are very popular among the world and also in Croatia. It is known that apples a have positive influence on human health in the form of reducing oxidative stress, cholesterol level and risk of diabetes. Apples can also contribute to reduce bacteria in the oral cavity. This research compares the antioxidant activity of apple juice obtained from four different species: Jonagold, Idared, Golden Delicious and Granny Smith. Antioxidant activity of apple peels was also analyzed and compared. Electron spin resonance (ESR), the spectroscopic technique that allows precise measurement of a free radical concentration in the sample, was used. The loss of ESR signal of 2,2-diphenyl-1-picrylhydrazyl (DPPH) was measured in function of time passed after adding a small amount of apple juice to radical solution, during 30 minutes. Antioxidant activity is related to the total polyphenols of juice extraction. The highest antioxidant activity showed Granny Smith with peel, while the lowest showed Jonagold species whose juice was obtained just from the pulp.
